Why hams are hung during curing

A row of hanging hams is a familiar image, but it does not tell a piece’s whole story. Suspension is part of organising drying and maturation. To understand it, look at the space between hams and the conditions in the room, rather than focusing only on the cord or hoof.

At a glance

Hanging and separating pieces leaves surfaces exposed to air during the process. Quality and category require more information than a drying-room photograph.

A useful position during production

After stages such as salting and washing, pieces may be kept suspended during later phases. Hanging makes it possible to arrange them on trolleys or rails without an entire side resting on a surface. It describes a way of organising production, not a claim that every stage always uses an identical position.

The space between pieces matters too

When looking at a drying room, notice the gaps around each ham. A separated piece leaves more surface accessible to air than one stacked against others. But hanging pieces very close together does not replace management of the room: arrangement and environmental conditions need to work together.

The cord does not measure quality

A hoof pointing upward and a suspended ham do not reveal breed, feeding, origin or curing months. A photograph cannot determine whether a process is properly controlled either. To understand a specific product, consult its designation and details rather than turning a traditional image into a commercial guarantee.
