Uramaki with rice outside, nori, avocado and cured ham

Cured ham and avocado uramaki: rice on the outside

Uramaki has rice outside the seaweed. Use ready-to-eat cured ham, not fresh raw meat. Cook a small rice batch and organise assembly so it is not left lukewarm waiting.

  • 160 g sushi rice
  • 2 nori sheets
  • 1 firm ripe avocado
  • 80 g sliced cured ham
  • 2 tablespoons rice vinegar
  • 1 teaspoon sugar; water as directed for the rice

Step-by-step method

  1. Rinse rice and cook with the water and resting time stated on its pack. Mix vinegar with sugar and distribute through cooked rice.
  2. Spread on a clean shallow tray to cool quickly, roughly 20 minutes as a guide. Do not cool in the cooking pan. If not using immediately, refrigerate promptly: FSA guidance favours cooling within an hour and eating refrigerated rice within 24 hours.
  3. Cover a sushi mat with food-contact-safe film. Place one nori sheet and spread half the rice thinly using clean slightly damp hands. Turn carefully so rice faces down.
  4. Cut avocado, remove skin and stone and slice the flesh. Arrange half with half the ham in a line on the nori. Roll using the mat, pulling the film away so it is not trapped inside. Repeat.
  5. Use a clean slightly damp knife to cut each roll into eight, cleaning between cuts. Serve four bites per person immediately.

Adapt the recipe to your kitchen

Rice timing depends on the pack; cooling is not a long room-temperature rest. Vinegar does not make this rice shelf-stable.

Check rice, vinegar, nori and ham for ingredients and allergens. No soy sauce or sesame is added. Do not use rice that has been cooled or stored incorrectly.

Cebo Iberian ham and 100% Iberian bellota ham are different categories; the recipe does not require the most expensive one. Check the specific product's ingredients and storage instructions. For other formats, explore ham to buy.
