Toasted sandwiches with cured ham, brie, pear and rocket

Cured ham, brie and pear sandwich: toast first, fill cold

Toast the bread on its own: the ham stays out of the pan and the brie remains creamy without melting. Thin pear slices keep the filling in place; dry the rocket before assembling.

  • 8 slices sandwich bread
  • 80 g sliced cured ham
  • 200 g brie
  • 1 pear, about 200 g
  • 40 g ready-to-eat rocket
  • Pepper to taste

Step-by-step method

  1. Wash and dry the pear, remove the core and slice thinly. Follow the rocket label, washing and drying well if required. Slice the brie.
  2. Toast the bread in a toaster or dry pan in batches without burning. Meanwhile, divide ham, brie, pear and rocket into four portions.
  3. Let steam escape from the bread briefly. Arrange brie, pear, ham and rocket on four slices. Add pepper if liked and close with the remaining bread.
  4. Cut each sandwich diagonally and serve immediately. Do not reheat or press down the fillings.

Adapt the recipe to your kitchen

A firm ripe pear slices more neatly than a very soft one. Sauce is unnecessary: brie adds creaminess and well-dried leaves keep the bread from becoming wet.

Contains milk; bread may contain wheat, egg or other allergens. Check labels and store ingredients as directed until assembly. The 15 minutes assume toasting and slicing in parallel; many batches may take longer.
