Melon gazpacho with cucumber and cured ham: texture and chilling

This gazpacho has no tomatoes: melon, cucumber, olive oil and a little vinegar form the base. Add the ham in the bowl rather than blending it, keeping its savoury contrast distinct.

At a glance

Do not add water at first; the amount needed depends on the melon.

  • 800 g melon flesh without rind or seeds
  • 200 g peeled cucumber
  • 80 g cured ham
  • 3 tablespoons olive oil
  • 1 tablespoon white wine vinegar (check the label for allergens)
  • Cold water only if needed; pepper and salt to taste

Step-by-step method

  1. Wash and scrub the melon and cucumber skins under running water before cutting, using a clean produce brush. Use a clean board and knife.
  2. Remove the melon rind and seeds. Peel the cucumber, reserve a little for garnish and chop the remainder.
  3. Blend melon, cucumber, oil and half the vinegar. Taste, then gradually add the remaining vinegar. Add cold water a tablespoon at a time only if too thick.
  4. Cover and refrigerate at 4 °C or below for at least an hour. Stir, divide between four bowls and add ham strips and the reserved diced cucumber.

Adapt the recipe to your kitchen

A less sweet melon needs less vinegar; adjust after blending and before salting, allowing for the ham.

Keep chilled until serving. Do not leave perishables out for over two hours, or one hour above 32 °C. No storage trial has been carried out for this recipe.
