Peas with Spanish ham: one pan, ham added at the end

Cook the peas first and add the ham at the end: that simple order gives you room to adjust the water without keeping delicate slices over the heat throughout. This version uses onion and one 80 g pack of ham for four starters.

At a glance

4 starters · 10 min preparation + about 20 min cooking · 80 g ham in total. Use the cooking instructions on your peas as your reference.

Ingredients and timing for 4 starters

Preparation: about 10 minutes. Cooking: about 20 minutes. Estimated total: 30 minutes.

  • 600 g frozen peas
  • 150 g peeled onion
  • 80 g sliced dry-cured Spanish ham
  • 15 ml olive oil
  • 100 ml water, plus a little more only if needed

Step-by-step method

  1. Chop the onion and cut the ham into short strips with clean utensils. Keep the ham as directed on its pack until needed.
  2. Heat the oil in a wide frying pan. Add the onion and cook over medium-low heat for about 6 minutes, stirring, until softened without burning.
  3. Add the peas and 100 ml water. Cook according to the pack; as a guide, start checking the texture after 8–12 minutes. Stir and add small amounts of water if the pan dries before the peas are tender.
  4. Once cooked, remove any excess liquid. Turn off the heat, gently mix in the ham, divide between four plates and serve.

Adapt the recipe to your kitchen

Still firm? Continue cooking according to the pack, adding water a little at a time. Too much liquid? Let it evaporate before adding the ham. Pan width and pea size affect the result.

For more distinct pieces of ham, mix in some off the heat and scatter the rest over the plates. There is no need to fry it until crisp. If using fresh peas, check their cooking time rather than applying the frozen timing automatically.
