In this tray bake, the oven cooks the vegetables and the ham joins at the end. Potatoes start before courgette so they do not need the same cooking time. Finish with soft folds of ready-to-eat cured ham and parsley.
Roast potatoes first, then add courgette and onion. Finish with ham out of the oven, checking that the potatoes are tender before serving.

- 600 g potatoes
- 400 g courgette
- 1 red onion, about 150 g
- 80 g ready-to-eat sliced cured ham
- 2 tbsp olive oil
- 1 tbsp chopped parsley
Step-by-step method
- Heat a conventional oven to 200 °C. Wash vegetables and peel potatoes if preferred. Cut potatoes into wedges about 1.5 cm thick.
- Toss potatoes with one tablespoon of oil. Spread in a roasting tray without piling up and roast for 20 minutes.
- Cut courgette into half-moons about 2 cm thick and onion into wedges. Toss with the other tablespoon of oil, add to the tray and turn carefully.
- Roast for another 20–25 minutes, turning vegetables once. Check potatoes are tender with a fork; cook longer if needed, removing any vegetables already done.
- Take the tray out and rest for 5 minutes. Add folded ham over the vegetables, scatter parsley and serve without returning to the oven.

Cut size and oven affect timing: tender potatoes matter more than the clock. Use two trays if necessary rather than crowding vegetables.
Ham goes in last for a different texture from a crisp baked slice. Use a ready-to-eat product, follow its label and taste before adding salt yourself.
Prepare only what you will serve and follow each ingredient’s storage directions. Do not leave perishables out of refrigeration beyond 2 hours, or 1 hour above 32 °C; these are not recommended waiting times.
