100% Ibérico Bellota ham · Product image · Paco Heredia

To serve Ibérico shoulder ham in Cádiz without buying a whole piece, choose between two Bellota 100% packs at Paco Heredia. The 80 g 959 shoulder ham is hand-carved with a knife; the 80 g Altanza shoulder ham is machine-sliced. Bellota category, Ibérico breed percentage and stated net weight match. Both brand and slicing method change. Read their current product pages and choose one reference or combine units to present each product separately at your table.

The slicing method is not the only difference

959 is the hand-carved reference featured in our sliced selection. Altanza is a separate Bellota shoulder ham with 100% Ibérico breed and machine slicing. Comparing them does not isolate a charge for carving because the brand also changes. Bellota describes acorn feeding during the montanera; 100% describes breed, not how many acorns a pack contains. Both come from the foreleg and are shoulder ham, rather than hind-leg ham. Choose by the complete product name and do not assume an unstated curing period, particular origin or certification.

Compare cebo, cebo de campo and bellota on the product pages. The Ibérico percentage describes the breed; the category describes feeding and husbandry. Gran Reserva Duroc is a separate selection and is not Ibérico.

Two 80 g packs without a fixed slice count

The weight is net food weight. It excludes packaging and does not promise identical slice counts. You can plan a tasting without a ham stand, opening the units intended for your meal and storing the rest according to their labels. If you prefer a packaged plate, note that the Altanza plates in the catalogue contain hind-leg ham and are machine-sliced with a knife-cut effect. That effect does not mean hand carving, and changing from shoulder ham to ham changes the anatomical cut too. Use the collections to check the options under their own full names before choosing.

What is the difference between jamón and paleta?

Jamón comes from the hind leg; paleta comes from the foreleg. Compare the weight, format and price of each product. The weight of a whole piece includes bone and outer fat.

What do the Ibérico percentage and category mean?

The percentage refers to the breed. Cebo, Cebo de Campo and Bellota describe feeding and rearing. Read the full product designation on the product page.

How does the cutting service work?

Machine slicing adds €59 per ham or €39 per shoulder ham. Hand slicing with a knife adds €70 per ham or €50 per shoulder ham. The variants show the full price. Preparation takes 48 or 72 hours respectively; transport time is additional.
