Pork loin, tenderloin, back fat and belly: understand the names

A recipe asks for tenderloin while a board includes cured lomo. Both come from pork, but they are neither the same cut nor the same finished product. Separate the anatomical cut, its processing and its instructions for use before choosing.

At a glance

Loin and tenderloin are different cuts. The Spanish terms tocino and panceta alone do not tell you whether a product is fresh, salted or ready to eat: read its full designation.

Loin and tenderloin are separate cuts, not sizes

Loin belongs to the back and lumbar region; tenderloin is a separate lumbar cut below the loin. It is not simply a small loin or the centre of a cured lomo. INTERPORC’s cutting guide treats them as distinct pieces. If substituting in a recipe, check preparation, size and cooking for the actual cut rather than copying the other cut’s timing.

Tocino and panceta: fat, lean and processing

Tocino refers to subcutaneous fatty tissue; panceta has fat interspersed with lean and comes from the abdominal region. Products may be fresh, salted or seasoned, among other preparations. The word bacon does not give every reference identical preparation requirements. Look for processing, ingredients and instructions rather than identifying a product from bands in a photograph.

Fresh loin and cured lomo are not direct substitutes

Cured loin undergoes preparation, seasoning, stuffing and curing-maturation while keeping a recognisable muscle piece. Fresh or seasoned loin requiring cooking has a different use. Our Ibérico loin production guide explains the stages; caña de lomo and lomo embuchado explains names for the finished product. No photograph turns raw meat into food ready to serve.

AI editorial illustrations distinguish fresh cuts from cured food; they are not anatomical charts or fresh-meat catalogue references.

The selection follows the Jamones Paco Heredia catalogue. Editorial photographs illustrate formats; check the collection for current products and their details.

Apply the distinction to your purchase

For cooking, note the required cut and confirm its directions. For a board, check the specific ready-to-eat preparation, ingredients, allergens, weight and storage. The sliced cured meats collection shows available Jamones Paco Heredia products; these explanations do not advertise a fresh-meat range. If adding ham, choose its format separately in the ham selection.
