Opened sliced ham: a routine for storage and serving

A sealed pack and the same pack after opening are not in the same situation. Before handling sliced ham, prepare the portion and a place to store what you will not serve. The specific pack instructions matter, not the appearance of another product.

At a glance

Before opening, find storage temperature, date marking and after-opening instructions. The printed date does not replace the specific opened-pack limit.

Before: identify the pack and its instructions

Check that the pack is intact and read directions before removing them. The AESAN labelling guide explains that storage conditions and limits can change after opening. If chilling is required, vacuum packaging does not replace it. Do not assume the same limit for every pack.

During: separate the portion you will serve

With clean hands, surfaces and utensils, put the planned amount on a plate. Avoid handling every slice when you need only some. Keep the label and batch information; note when you opened the pack to apply its directions. Ham and shoulder packs help stagger openings, but each product retains its own details.

After: protect it and follow after-opening directions

Store the unserved portion with the protection and conditions stated for the product. Use materials suitable for food contact. Closing the pouch again does not reset the limit or restore its original state. If directions are missing or storage history is unknown, ask before eating; a smell test is not a safety guarantee. Respect the original date marking too; opening the pack does not extend it.

Plan the next pack rather than an imagined shelf life

Open packs gradually according to what you will serve and assess the still-sealed ones separately. When you buy Spanish ham, match format and quantity to your occasions.
