Vacuum-packed chorizo: how to work out how long to keep it

Vacuum packing describes a presentation, not a use-by date. To work out how long you can keep chorizo, first identify the product and retain its instructions. A cured sausage and fresh chorizo requiring cooking are not handled alike even if both arrive in close-fitting bags.

At a glance

Look for the product description, date and chilling and opening instructions. If any are missing, ask about the reference before extending storage; repacking does not restart the date.

Start by identifying the product

Check whether the label identifies a ready-to-eat product or one requiring cooking. Do not decide from the word ‘chorizo’ or the shape alone. If a recipe calls for fresh chorizo, do not automatically transfer its instructions to cured chorizo for an aperitif, or the other way round.

USDA information distinguishes ready-to-eat sausages from those requiring cooking. That distinction helps frame the first question, but does not establish one storage duration for all Spanish chorizos. Your reference's label remains the starting point.

Sealed packs: dates and conditions belong together

Read the date and storage conditions before putting the product away. AESAN explains that storage instructions are part of safe use. If you receive or buy it chilled, do not move it to the cupboard just because it is vacuum packed: check the stated conditions.

Distinguish use-by and best-before dates rather than treating them as synonyms. Do not eat food after its use-by date. This guide does not authorise a general extension of best-before dates either: storage and packaging integrity matter. If you do not know how the product has been kept, ask before serving.

After opening: keep the label and use the relevant instructions

Check for a specific temperature or time after opening. The sealed-product date does not by itself answer how long a started sausage lasts. Note when you opened it and keep its name, batch and instructions if transferring it to another food-safe container.

Prepare only the planned portion with clean utensils and store unserved food according to the instructions. Repacking at home or closing a bag with a clip does not return the product to its original state or restart its shelf life. Do not use smell or a small taste to justify unknown storage conditions.

What to ask if the product page is unclear

Give the reference name and ask whether it needs chilling sealed and opened, what time applies after opening and whether there are instructions for that presentation. Do not simply ask ‘how many months does chorizo last’: an answer about another product may not apply.

When buying, consult the current chorizos and their own product pages. Choose size according to planned occasions and instructions, rather than a duration found for another brand or an earlier batch. The catalogue is not changed to fit an estimate in this article.
