Water from broccoli can leave an omelette soft even when the outside is golden. Steam, drain and chop it before mixing with egg. Add the ham on top only after the omelette is cooked.

- 500 g broccoli in small florets
- 6 eggs
- 1 onion, about 100 g
- 80 g sliced cured ham
- 2 tablespoons olive oil
- Pepper and salt to taste
Step-by-step method
- Wash the broccoli and steam for about 6–8 minutes until tender. Drain very well and chop the florets. Peel and chop the onion.
- Soften the onion with one tablespoon of oil for about 5 minutes in a non-stick frying pan about 20 cm wide. Beat the eggs and add broccoli, onion and a little pepper.
- Add the remaining oil to the pan and pour in the mixture. Cook over medium-low heat for about 5–7 minutes. Turn using a plate that fully covers the pan and cook another 3–5 minutes, adjusting until the centre is firm and reaches at least 72 °C on a thermometer.
- Transfer to a platter, cut into four portions and top each with ham ribbons. Taste before adding salt and serve immediately.

Timing depends on thickness, heat and pan: a golden outside does not confirm a cooked centre. If turning is difficult, make two thinner omelettes and adjust the times.
Contains egg. Use clean utensils after handling the raw mixture. This version does not aim for a runny centre; FDA guidance provides the egg-dish safety reference.
