Stew of green beans, carrot, peas and artichoke with cured ham

Vegetable stew with cured ham: add vegetables in order

A vegetable stew needs tender vegetables, not identical cooking times. Carrot and artichoke go in first, followed by beans and peas. Divide the ham over the finished portions to keep its texture.

  • 300 g green beans
  • 200 g carrots
  • 200 g frozen peas
  • 200 g frozen quartered artichoke hearts
  • 1 onion, about 100 g
  • 80 g sliced cured ham
  • 2 tablespoons olive oil
  • 300 ml water, plus extra as needed; pepper and salt to taste

Step-by-step method

  1. Wash and cut the beans. Peel and cut carrots into small pieces; peel and chop the onion. Check the cooking instructions on the frozen vegetables.
  2. Soften the onion in a saucepan with the oil for 5 minutes. Add carrot, artichoke and water, cover and simmer gently for about 10 minutes.
  3. Add beans and peas and cook for about 10 minutes more, until tender and the frozen vegetables have cooked for their stated time. Add hot water if dry; uncover at the end if too wet.
  4. Remove from the heat, taste and adjust pepper and salt. Divide between four plates and add ham ribbons without further cooking.

Adapt the recipe to your kitchen

Cut carrot smaller than artichoke so their cooking times are closer. If changing vegetables, adjust the order to their firmness and pack instructions.

No flour or prepared stock is needed. Still check labels for allergies; not every ham or vegetable mix is suitable for every diet.
