Cook the beans first and poach the eggs separately. This version has firm whites and yolks; poaching time is a guide and doneness must be checked. Add the ham when plating rather than boiling it in the water.

- 600 g green beans
- 4 eggs
- 80 g sliced cured ham
- 2 tablespoons olive oil
- 1 tablespoon white wine vinegar for poaching water
- Water, pepper and salt to taste
Step-by-step method
- Wash the beans, trim the ends and cut into pieces. Boil for about 8–12 minutes until tender to your liking. Drain and toss with the oil in a clean serving dish.
- Heat about 6 cm of water with the vinegar in a wide saucepan, keeping it at a very gentle simmer. Crack each egg into a cup and carefully slide it into the water. Work in uncrowded batches.
- Poach for about 7–9 minutes as a guide, checking that both white and yolk are firm. Lift out with a slotted spoon and drain. Adjust timing for egg size and water temperature.
- Divide the beans between four plates, add one egg each and finish with ham ribbons. Add pepper, taste before salting and serve immediately.

Avoid a strong whirlpool when cooking several eggs: a wide pan and barely simmering water help keep them separate. Check inside one egg if unsure about doneness.
Contains egg; also check vinegar and ham labels. FDA guidance calls for firm whites and yolks. The 30-minute estimate assumes beans and eggs cook in parallel; several batches may take longer.
