Brown the mushrooms before adding liquid so their water does not dilute the sauce. Blend only part with the milk and leave the rest sliced. Cut the ham into small ribbons and add it off the heat.

- 320 g dried short pasta
- 400 g button mushrooms
- 1 onion, about 100 g
- 150 ml milk
- 80 g sliced cured ham
- 2 tablespoons olive oil

Step-by-step method
- Clean and slice the mushrooms. Peel and finely chop the onion. Heat the oil in a wide frying pan and soften the onion for about 5 minutes.
- Add the mushrooms and sauté for 8–10 minutes until the liquid evaporates and they begin to brown. Meanwhile, cook the pasta according to its pack; reserve a cup of cooking water before draining.
- Blend half the mushrooms and onion with the milk. Return to the pan with the remaining mushrooms and heat gently for about 2 minutes. Add the pasta and spoonfuls of reserved water if needed.
- Remove from the heat. Divide between four plates and finish with small ham ribbons and pepper. Taste before salting and serve immediately.

If mushrooms stew in their own water, use a wider pan or cook in batches. Do not try to thicken the sauce by boiling the ham in it.
Milk is an allergen and pasta may contain wheat and egg: check the packs. The 30-minute estimate assumes the pasta cooks while the mushrooms sauté.
