Roast the potatoes so the frying pan is free for the eggs. This version uses firm whites and yolks, broken over the potatoes before the ham is added; it does not rely on runny yolks.
Have the potatoes ready before cooking the eggs and assemble straight away.

- 800 g potatoes
- 4 eggs
- 80 g cured ham
- 3 tablespoons olive oil for the potatoes
- 1 tablespoon oil for the frying pan
- Pepper and salt to taste
Step-by-step method
- Heat the oven to 210 °C. Wash the potatoes, cut into evenly sized wedges and dry thoroughly.
- Toss with three tablespoons of oil and spread in one layer. Roast for about 30–35 min, turning halfway, until tender inside and golden outside.
- Heat the remaining tablespoon of oil in a non-stick pan. Cook eggs in batches until both whites and yolks are firm; turn or cover as needed. Do not reuse utensils soiled with raw egg.
- Divide the hot potatoes between plates. Add the eggs, break into pieces with two forks and top with ham strips. Taste before salting and serve immediately.
