White bean salad with roasted sweet potato and cured ham

Use cooked white beans and roast the sweet potato in cubes. Let the edges hold their shape and add the ham at serving time rather than stirring it repeatedly through the salad.

At a glance

  • 400 g cooked white beans, drained
  • 500 g peeled sweet potato
  • 80 g cured ham
  • Half a small red onion
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Parsley, pepper and salt to taste

Step-by-step method

  1. Heat the oven to 200 °C. Cut sweet potato into 2 cm cubes and toss with one tablespoon of oil. Spread out on a baking tray.
  2. Roast for about 25 min, turning halfway, until tender and browned. Let the strongest heat subside without leaving it out for hours.
  3. Rinse and drain the beans. Chop the onion; rinse it under cold water and drain if too strong. Mix the remaining oil with lemon and pepper.
  4. Dress the beans with onion and parsley. Gently fold in the sweet potato and add ham strips when serving. Taste before salting.
