  • 1 shortcrust pastry sheet, about 250 g
  • 250 g courgette
  • 250 g button mushrooms
  • 1 onion, about 100 g
  • 3 eggs and 200 ml milk
  • 80 g cured ham strips
  • 2 tablespoons olive oil; pepper and salt to taste

Step-by-step method

  1. Heat the oven to 180 °C. Line a 24 cm tin, prick the base and blind bake with paper and baking weights for about 12–15 minutes, following the pastry pack.
  2. Wash and cut courgette, mushrooms and onion. Sauté with oil for about 10 minutes until liquid evaporates. Cool slightly. Beat eggs and milk and add vegetables and ham.
  3. Remove paper and baking weights. Pour into the crust and bake about 30–35 minutes until the centre is firm and reaches at least 72 °C on a thermometer. Shield the top if it browns early. Rest about 10 minutes before cutting into four.
