Thin ham slices on a plate beside an open packet

Vacuum-packed ham: keeping it sealed and what changes after opening

A vacuum pack does not come with one universal storage period. Before keeping it for a future meal, find the date, stated temperature and instructions after opening. Information for a whole piece should not be transferred to a packet of slices.

At a glance

Follow that product's label. Vacuum packaging does not replace refrigeration when required, and resealing does not reset its date or the period after opening.

Sealed packs: read the date and conditions together

Identify whether the label gives a use-by or best-before date. AESAN distinguishes the safety associated with the former from the expected quality expressed by the latter; both must be read alongside storage conditions. Do not eat food after its use-by date. Do not assign ninety days, six months or another period to all vacuum-packed ham: processing, format and packaging can differ. To plan for a specific date, ask about the available product.

Vacuum packaging alone does not determine where to keep it

Check the stated temperature and maintain the required conditions during transport and storage. If refrigeration is required, keep it refrigerated; a bag fitting tightly around the product does not allow it to move to the pantry. Retain identification and check that the seal and packaging are intact. If you notice damage, seal failure or an unexpected condition, do not taste the ham to decide whether it is safe: document the issue and seek advice before consuming. A photograph cannot replace its storage history.

Opening creates a different situation

Instructions and the consumption limit can change after opening. AESAN explains that opening allows new contamination and may require different storage. Record when it was opened, separate what you will serve using clean utensils and protect the remainder as directed. Resealing a bag or using a domestic vacuum sealer does not restore the original shelf life. Follow the instructions after opening and the original date; do not automatically choose the longer period.

Plan openings instead of inventing days

Relate grams per pack to eating occasions so that you open only what you need. A small pack may help this organisation, but retains its own instructions. If the label is missing or you do not know how long it was outside the stated conditions, seek advice before consuming and avoid treating a smell or taste test as a guarantee. In the sliced-ham collection, check current weight, availability and details; commercial cards do not set a storage period for the whole catalogue.
