Comparing Spanish and Italian ham means being precise about names. Not all Spanish ham is Iberian, and not all prosciutto is cured ham with a protected designation. Make the comparison using two actual labels and the same purchasing format.
Serrano identifies a traditional speciality; Gran Reserva is a production-period term. In Italian, distinguish prosciutto crudo from cotto; Parma is a specific PDO.
Serrano is not another word for Iberian
Spain's Ministry of Agriculture lists Jamón Serrano among traditional specialities guaranteed. This scheme relates to a traditional practice or method; it is not a geographical designation. Iberian designation follows a different standard combining product, feeding and management, and racial designation. Do not use Spanish, Serrano and Iberian interchangeably or assign certification to a product that does not declare it. Read the full name of the product in front of you.
Gran Reserva is not a breed name either
Spain's meat-product quality standard provides for Gran Reserva on cured hams with a minimum production period of fifteen months; for shoulders it sets nine. This is different from Duroc, which identifies a breed. The article regulating these terms excludes products covered by the Iberian standard. A regulatory minimum does not reveal each piece's exact age either: use the period declared for that product, if given, without inferring it from a photograph or country.

For comparison with Spanish cured ham, identify prosciutto crudo; prosciutto cotto is cooked ham and involves different processing. Prosciutto di Parma is a specific protected designation of origin with its own area and requirements. Its documentation describes pork leg and sea salt as ingredients, but do not extend that composition to every product called prosciutto. Check the Italian product's ingredients, designation and identification just as you would the Spanish one's.

Compare product and format, then decide by use
For two packs, note net grams and calculate price divided by grams multiplied by one hundred. Do not compare that directly with the price per kilogram of a bone-in piece as though it were all served slices. Also check storage, cut and the amount planned for the table. These categories do not establish a universal winner, fixed intensity or nutritional advantage. Consult Jamones Paco Heredia's current products without assigning them an Italian PDO or certification absent from their information.
